Duties and Responsibilities
As Sommelier, I will assume full responsibility for the efficient operation in the following:
Create and update the wine list in coordination with Wine Manager and Beverage Manager.
Advise guests on wines based on their personal tastes and food choices.
Inform guests about different varieties of wines and prices.
Assist in the inventory control and ensure par levels are met
Ensure wines are kept properly and at the right temperature and minimize wastage to ensure beverage cost is not compromised
Organize personalized wine experiences and tastings through the resort
Inspect condition and cleanliness of menus and wine list, ensure designated amounts are available, and update menus or wine lists as changes occur.
Manage wine cellar and ensure it’s fully-stocked.
Train F&B Hosts on available wines.
Use the appropriate glassware for the different beverages.
Ensure the prompt and efficient service of all beverages set by the resorts required standards.
Have knowledge of guests likes and dislikes pertaining to drinks throughout their stay.
Make every effort to ensure the comfort and enjoyment of guest’s beverage requests throughout service.
Ensure that you are aware and informed of all products the resort bars use for service including the bar machinery.
Have a good knowledge of all outlet menus (food and wine) and F&B day to day activities and operational hours.
Recommend and promote items as directed by supervisor.
Maintain at all times the highest standard of social skills.
Report any maintenances faults following the required steps.
Knowledge on menu prices and suggesting upselling when necessary.
Ensure all equipment of the department is kept clean and in good working condition.
Upkeep Six Senses guidelines and standards of service and operation. My performance benchmarks are maintained and exceeded.
Strictly adhere to LQA standards and guest comments.

To execute the position of Sommelier, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:
Sommelier Certification or Valid Diploma. At least 3 years of experience in a full-service outlet or similar setting.
Hospitality diploma/degree from a recognized hospitality school is preferred.
Ability to create tasteful food and wine pairings.
Excellent communication skills.
Fluent in English. Additional languages are preferred.
Valid European work permit is mandatory.
